<b>गर्मियों</b> आम का पना (Aam ka Pana) खूब पीना चाहिए। कच्चे आम से बनने के कारण इसमें विटामिन सी भरपूर मात्रा में पाया जाता है। यह लू से बचाने में बहुत मददगार होता है। इसके साथ ही साथ यह हाजमे के लिए भी बेहद अच्छा होता है। नियमित रूप से इसका सेवन करने से शरीर में कोलेस्ट्रॉल कंट्रोल होता है, जिससे हार्ट अटैक की संभावनाएं कम हो जाती हैं। इसे बनाना बहुत आसान है। तो आइए जानते हैं आम का पना रेसिपी (Raw Mango Cooler Recipe):<br />

Ingredients:</h4>

3 medium size green raw mangoes<br />
1 cup Sugar<br />
1 tblsp roasted cumin powder<br />
Black salt to taste<br />
Salt to taste<br />
2 cup water<br />
1 tblsp Mint leaves (pudina patta)<br />
Ice crushed</div>

How to make aam panna:</div>
<br />
<ul>
<li>Place the mangoes along with water in a sauce-pan and bring to a boil. Simmer for 10 minutes.Then remove from fire</li>
<li>Alternately you can pressure cook the mangoes with water till soft.</li>
<li>Let them cool and then peel the mangoes and get the pulp with the help of a spoon. Grind mango pulp along with water to a smooth paste.</li>
<li>In a pan take the pulpy mixture, add sugar and let it cook on flame till the sugar dissolves completely. Stir continously lest you burn the mixture.</li>
<li>Remove from fire and add roasted cumin powder, black salt and salt.</li>
<li>Let this mixture cool down properly.</li>
<li>To make the drink : take a tall glass pour 1 -2 tblsp of the mango mixture and pour in chilled water till 3/4 th. Now add finely chopped mint and crushed ice.</li>
<li>Garnish with mint leaves and serve immediately.</li>

1. You can increase or decrease the quantity of sugar as per your desire.<br />
2. You can use jaggery instead of sugar.<br />
3. This mixture can stay in refrigerator for upto a week.

Today I am sharing Kalakand recipe with you, which you can make in just 10 minutes. Kalakand is one of popular Indian sweet recipes also popular as Malai Burfi. This is one of my favourite recipes and I just love to make it at home. Kalakand or malai burfi has a creamy juicy flavor which makes it special, but it has a short shelf life, so that you can store it for 2 days only.<br />

Kalakand Recipe Ingredients</h3>
<ul>
<li>Condensed Milk- 400 gm/ 1 Tin</li>
<li>Crumbled Paneer- 300 gm</li>
<li>Milk- 2 tbs</li>
<li>Rose Water or Cardamom powder – 1 tsp</li>
<li>Cashew nut/ Almonds/ Pistacho- 15-25 (Chopped)</li>
</ul>

Kalakand Recipe Steps</h3>
Firstly we will have to do some preparation before starting this easy Instant Kalakand Recipe.<br />
Grease Plate or tray with desi ghee, in which you have to set kalakand.
<br />

<li>Chop or crush dry fruits.</li>
<li>Grate or crumble paneer, there should be not chunks in crumble paneer. I suggest you to crumble paneer than grating, as it will give better texture to kalakand.</li>
</ul>

Cooking Steps</h3>

<li>Now firstly add condensed milk and crumbled paneer to a heavy bottom pan. Mix them well and cook the mix on low flame.</li>
<li>Stir the mixture continuously so that it will not stick to pan and prevent it from burning.</li>
<li>Cook mixture till it turn thick and start leaving its pan. It will take around 14-16 minutes to thicken kalakand mixture. Mixture should be thicken with little moisture in it.</li>

<li><b>Cashew Paste – 25 g</b></li>
<li><b>Onions – 2</b></li>
<li><b>Tomatoes – 300 grams</b></li>
<li><b>Green chilies – 2</b></li>
<li><b>Oil – 1½ tablespoons at 2 different times</b></li>
<li><b>Bay leaves (Tez Patta) – 2</b></li>
<li><b>Cloves – 2</b></li>
<li><b>Black Cardamon – 1</b></li>
<li><b>Ginger Garlic paste – 2 teaspoons</b></li>
<li><b>Salt – to taste</b></li>
<li><b>Red Chili Powder or Paprika – ½ teaspoon</b></li>
<li><b>Tumeric – 1 pinch</b></li>
<li><b>Coriander powder – 1 teaspoon</b></li>
<li><b>Water – according to our preference</b></li>
<li><b>Tomato sauce – 1 teaspoon</b></li>
<li><b>Fresh cream – 100 grams + 25 grams</b></li>
<li><b>Coriander – 1 handfuf</b></li>
</ul>

Preparatory steps of Shahi Paneer Recipe</h3>
<ol>
<li>Allow Paneer to defreeze before cooking.</li>
<li>Make cashew nuts paste using a blender with 2 to 3 tablespoons of water and keep aside.</li>
<li>Chop coriander leaves and keep aside.</li>
<li>Cut onions, tomatoes and green chilies into small pieces – Will semi-cook & grind them later.</li>
<li>Heat 1½ tablespoons of oil in a pan and then, add onions and stir them for around 3 minutes.</li>
<li>Then, add the tomatoes and green chilies and stir properly and cover the pan to allow cook for 8 to 10 minutes.</li>
<li>Now, switch off heat and put them in mixer and blend them into a purée* and keep them aside.</li>
<li>Chop your soft Paneer into squares or rectangular depending on your preference.</li>
</ol>

<span class="dropcap dropcap1 ">S</span>Steps of Shahi Paneer Recipe</h3>
<ol>
<li>Clean your sauce pan and add oil and allow to heat a little.</li>
<li>Immediately, add 2 bay leaves, 2 cloves and 1 black cardamom and stir properly for a minute or 2.</li>
<li>Once the cloves & cardamom become red, remove them from the oil 
and add 2 teaspoons of the ginger-garlic paste and stir properly to 
AVOID BURNING.</li>
<li>Then, add the Onions-Tomatoes-Chilies purée* and stir quickly and add:<br />
(i) Salt – to taste<br />
(ii) Red Chili Powder or Paprika – ½ teaspoon<br />
(iii) Tumeric – 1 pinch<br />
(iv) Coriander powder – 1 teaspoon</li>
<li>Stir everything properly and lower the flame because there is a high risk of burning the ingredients here.</li>
<li>Then, add the cashew nuts paste and again stir and add some water to get a saucy gravy.</li>
<li>Allow cook for 2 to 3 minutes and add 1 teaspoon of tomato sauce and
 allow the gravy to cook over low to medium flame till bubbling.</li>
<li>Then, lower flame and add the cream and stir and add coriander leaves and paneer and allow cooking.</li>
<li>Increase heat to medium for a few more minutes and check one Paneer to see if cooked and check salt.</li>
<li>If all is cooked, then, switch off heat and after putting in bowl, pour some fresh cream again to garnish.</li>

<li>Firstly mix wheat flour (aata), semolina (sooji), gram flour 
(besan), salt and red chilli powder in a mixing bowl. Beat them with 
adding water/milk. In this amount of quantity i usually beat batter with
 300-400 ml water/milk.</li>
<li>Beat it till you get a smooth paste without any lumbs. Let it rest for 5 minutes.</li>
<li>After that add chopped onion, tomato, green chilli and green coriander (dhaniya) to it and mix them well again.</li>
<li>Now heat up non stick tawa and grease it with half tsp of oil. Pour 
one cup of batter on tawa with karchi or any deep utensil and give it a 
round shape.</li>
<li>Once one side get properly cooked, turn the side and cook it 
properly. If you want to make this vegetarian omelette crispy then apply
 oil on surface and sides.</li>

Peel the onions and slice thinly. Place on a large flat plate, sprinkle with the flour and 1 teaspoon salt, and mix well with your hands. Heat the sunflower oil in a medium heavy-bottomed saucepan placed over high heat. Make sure the oil is hot by throwing in a small piece of onion; it should sizzle vigorously. Reduce the heat to medium-high and carefully (it may spit!) add one-third of the sliced onion. Fry for 5 to 7 minutes, stirring occasionally with a slotted spoon, until the onion takes on a nice golden brown color and turns crispy (adjust the temperature so the onion doesn’t fry too quickly and burn). Use the spoon to transfer the onion to a colander lined with paper towels and sprinkle with a little more salt. Do the same with the other two batches of onion; add a little extra oil if needed.</div>

Wipe the saucepan in which you fried the onion clean and put in the cumin and coriander seeds. Place over medium heat and toast the seeds for a minute or two. Add the rice, olive oil, turmeric, allspice, cinnamon, sugar, 1/2 teaspoon salt, and plenty of black pepper. Stir to coat the rice with the oil and then add the cooked lentils and the water. Bring to a boil, cover with a lid, and simmer over very low heat for 15 minutes.</div>
