<li>Curd – 2 cup</li>
<li>Water – 1 cup</li>
<li>Salt – 3/4 tbsp (or according to the taste)</li>

<li>Oil/butter or ghee – 1 tbsp ( to grease the idli stand)</li>

<b>Method:</b><br />

<li>Take curd . Put the curd in a bowl and mix rava/suji well</li>
<li>Take the water and salt and mix it .</li>
<li>Now keep the mixture for 20 minutes . After 20 minutes, pour Eno salt into this mix and mix well .</li>
<li>Do not over mix thick and thin .</li>

<li>Kundru (dondakaya) – 1/2 cup (length wise two piece cut)</li>
<li><span class="st"><em>Drumstick</em></span> – 1/2 cup (finger sized cut  )</li>
<li>Onion – 3 no. (without chopped)</li>
<li>Small onion – 5, sliced finely</li>
<li>Toor dal – ¾ – 1 cup</li>
<li>pink lentils or masoor dal – 1 cup</li>
<li>Water – 2 to3 cups</li>
<li>Garlic – 4 nos</li>
<li>Turmeric powder – ¼ tsp</li>
<li>Tomato – 2, sliced</li>
<li>Tamarind -adjust the qty as per your taste</li>
<li>Sambar Masala powder – 1.5 – 2 tbsp</li>
<li>Asafoetida (kayam) – ½ tsp</li>
<li>Red chilly – 2</li>
<li>Bay leaf – 2</li>
<li>Red chilly powder – 1/2 tbsp</li>
<li>Coriander powder – 1 tbsp</li>
<li>Cumin seeds – 1/2 tbsp</li>
<li>Fenugreek seeds – 1tbsp</li>
<li>Mustard – ¼ tsp</li>
<li>Curry leaves – 15 to 20</li>
<li>Salt as per taste</li>
<li>Oil</li>

<strong>Method :</strong><br />

<ul>
<li>First boil the toor dal and masoor dal in a pressure cooker until soft and mashed .</li>
<li>Heat oil in a pan and add dry red chillies, mustard seeds and Bay leaf .</li>
<li>When the mustard seeds crackle, add cumin seeds, fenugreek seeds, 
turmeric, red chilli powder Coriander powder, hing, garlic pieces and 
sauté.</li>
<li>Add drumsticks, eggplant, bottle gourd, carrot,Ladyfinger,curry leaves, onions and mix well.</li>
<li>Add tomatoes, tamarind juice, sambar powder, salt and mix well</li>
<li>add water and mix well</li>
<li>Cover the pan with the lid and cook till the vegetables are boil.</li>
<li>Add boiled and mashed dal, samber powder and place the lid and cook for another 20 mins on slow flame.</li>
<li>Now switch off the flame and serve with hot rice, Dosa , Idli etc . </li>

<br />
<li>हरा धनियां - 2-3 टेबल स्पून</li>

<li>तेल - 3 टेबल स्पून</li>
<br />
<li>करी पत्ता - 10-12</li>
<br />
<li>हरी मिर्च - 1-2</li>
<br />
<li>अदरक पेस्ट - 1 छोटी चम्मच</li>
<br />
<li>नमक - 3/4 छोटी चम्मच या स्वादानुसार</li>
<br />
<li>राई (mustard seed) - 1/2 छोटी चम्मच</li>
<br />
<li>ईनो फ्रूट साल्ट - 3/4 छोटी चम्मच</li>

विधि - How to make Khatta Dhokla</h2>
<br />
एक थाली जिसका व्यास 8-10 इंच हो ले लीजिये और थोड़ा सा तेल डालकर थाली को चिकना कर लीजिये. एसा बर्तन ले लीजिये कि ढोकला की थाली उस बर्तन में आसानी से आ जाय, बर्तन मे 2 कप पानी डालकर गरम करने रख दीजिये.<br />

इडली बैटर को किसी बड़े प्याले में निकाल लीजिए, बैटर में अदरक का पेस्ट, हरीमिर्च, नमक, 2 छोटे चम्मच तेल और दही डालकर मिला दीजिये. अब ईनो फ्रूट साल्ट डाल कर मिक्स कर दीजिये, ढोकला मिश्रण को चिकनी की गई थाली में डाल दीजिये और एक जैसा फैला दीजिये.<br />
<br />
बर्तन में पानी गर्म हो गया है, बर्तन मे एक जाली स्टेन्ड रख दीजिए उसके ऊपर ढोकला मिश्रण की थाली रख दिजिये, और ढोकला को 18-20 मिनिट तक मीडियम तेज आग पर पकने दीजिये, 20 मिनिट बाद ढोकला फूला हुआ दिख रहा है इसे गैस से उतार लीजिये, और चाकू की सहायता से ढोकला को टुकड़ों में काट लीजिये.<br />

ढोकला में तड़का लगा दीजिये, छोटे पैन में तेल डालकर गरम कीजिये, तेल गरम होने पर राई डाल दीजिये, राई तड़कने पर करी पत्ता डाल कर भून लीजिये, तड़के को ढोकला के ऊपर चम्मच से थोड़ा थोड़ा करके चारों ओर डाल दीजिये, ऊपर से हरा धनिया डालकर कर सजा दीजिये. ढोकला को हरे धनिये की चटनी, नारियल की चटनी या चिल्ली सास के साथ में परोसिये और खाइये.<br />

<li>ढोकला में आप तड़का नहीं लगाना चाहते यानि कि और अधिक तेल खाना नहीं चाहते तब ढोकला को पकाने रखते समय उसके ऊपर थोड़ा ताजा क्रस्ड काली मिर्च और लाल मिर्च डाल कर छिड़क दीजिये, और ढोकला एसे ही काट कर खाइये.</li>

<li>ढोकला में जो दही मिला रहे हैं वह अगर ताजा हो खट्टा न हो तो ढोकला में 1 नीबू का रस निकाल कर डाला जा सकता है.</li>

<li>इडली बैटर से बना ढोकला बिना कुछ डाले भी स्पंजी बनता है, लेकिन और अधिक स्पंजी बनाने के लिये ईनो फ्रूट साल्ट का यूज किया जाता है.</li>

In a large bowl, beat eggs on high speed until frothy. Add milk and sugar and continue beating. Add vanilla, nutmeg, cinnamon and melted butter and beat again. Gently fold in bread cubes, raisins and pecans. Pour mixture into a sprayed 9-inch square pan. Cover and refrigerate for 40- 60 minutes. Remove from refrigerator, uncover and bake at 325°F 45-60 minutes or until firm and brown. Cool slightly and cut into squares. Serve warm with ice cream or whipping cream if desired.</div>
